Whiskey: Blue Label Straight Bourbon Whiskey
Fun Fact: This whiskey isn’t aged on land, but in “boathouses” on a dock, giving each barrel a distinct character shaped by the sea!

Our Take: While many whiskeys around the world are hand-crafted, Chambers Bay Distillery goes beyond to say their spirits are “Land-Crafted”, and this slogan shines through. Co-Founders Alan and Jeff take care to utilize the unique advantages of the Pacific Northwest to create a whiskey that truly represents Washington. They show this commitment through only using grain grown in-state, including malting their barley locally at Great Western Malting, cherry-picking the very best grain all the way from seed form! Jeff also harvested the yeast they use in fermentation from a local apple orchard (seriously!). Their authenticity is second to none, using their hillbilly still to take precise cuts of their distillate designed to maximize flavor, before going into 25 gallon casks for aging. Where does this aging take place, you ask? Not in the air, not on land, but at SEA (in a sense)! Rather than using a standard rickhouse or warehouse, Chambers Bay has designed a “boathouse” to age their whiskey, adding heavily to their distillery characteristic of sea-salted caramel, first remarked upon by distilling legend Jim Rutledge. As they approach their 10th anniversary of distilling next year, they aren’t done innovating yet, with a rye in the works soon. The yeast they will use to ferment that rye mash? Distillery Story: Drawing inspiration from Puget Sound, WA-based Chambers Bay Distillery’s mission is to create uniquely extraordinary spirits. Buddies Jeff Robinette and Alan Davis channeled their love of great whiskey into crafting Chambers Bay Distillery's first batch in 2014. Since then, their creations have racked up honors from the American Distilling Institute, the Seattle International Spirits Awards, the San Francisco World Spirits Competition, and the New York World Wine & Spirits Competition. As our mission statement indicates, we’ve set a high bar for our spirits. Harnessing the power of the sea, this bourbon is aged in one of our floating boathouses on Puget Sound. The wave and tidal movement created by the hydrokinetic energy expedites the aging process by increasing the interaction of the spirit and the wood inside our charred new american-oak barrels. The sea also enhances our bourbon with a subtle note of sea salt. Our approach to making whiskey combines a healthy respect for traditional methods with the innovative spirit and natural resources of the Pacific Northwest. All of our bourbon whiskies are crafted grain-to-bottle on premise. Most importantly, we plan to create spirits which we are passionate about because our enthusiasm will show through to our partners and customers—significantly enhancing our chances of building strong brands and a successful business. Our long-term goal is to make the best whiskey in the World.

Aroma Notes: Rich nose, vanilla, herbal tea, lemongrass, a touch of cinnamon and nutty oak, graham crackers
Tasting Notes: Approachable, sweet caramel corn, grassy, pear drops, raw hazelnuts, dark wood, lightly toasted coconut, apple cider donuts, ripe apples straight from the orchard, butterscotch
Finish: Great texture, mid length finish of red berries fading into peppery spice
Our Take: This is about as real as it gets. Whiskey Acres is a true farm distillery, taking care to craft their whiskey from Seed to Spirit. This 5 year Bottled-in-Bond Bourbon really impressed us with its depth of flavor and uniqueness, bringing something new to the whiskey table. As a testament to their commitment to their “Farmcrafted” motto, they not only have a Master Distiller, but also a Master Farmer (different people!). Nick and Jamie, the founders of Whiskey Acres, have their background in integrated farming and seed innovation, giving them the know-how to impress the “Founding Father of the Craft Distilling Movement” Dave Pickerell (of WhistlePig, Watershed, and Garrison Brothers fame), who worked with them to select yeast strains that fit the style of whiskey they wanted to produce. It’s fitting that this is the first Bottled-in-Bond whiskey in our lineups, as the Bottled-in-Bond act of 1897 was the first consumer protection act here in the United States, ensuring quality in the product and safe-guarding the drinkers from whiskey with unsafe additives. Basically, a stamp of approval in Authenticity, something we seek out in all our partner brands, and an attribute that Whiskey Acres has in spades. Not only is all their whiskey produced in a single year (a must for BIB products), but their grain also comes from that same year, giving their spirits the moniker “Whiskey with a Vintage”. Their pride in what they put into the bottle is readily apparent, and we are thrilled to see what else they will be coming out with down the road (Blue Popcorn Bourbon, anyone??). Let it breathe, this is a whole glass whiskey, not a one sip whiskey.
Distillery Story: From Seed to Spirit What does it take to make the finest whiskey in the world? Start with the finest grains grown on the best soils the earth has to offer. Add water naturally filtered by the limestone aquifer found deep under those same soils. Then complete the task by handcrafting a distilled spirit using the same hands of the fifth generation farmers who grew that grain. They know the land, their ingredients, and what it means to pay attention to detail. Blend together using equipment and know-how forged in the rolling hills of Kentucky. Add a little patience. Distilling year-round and open to the public every Friday-Sunday, we are an Estate Distillery like none other in the United States. In Chicago’s own backyard.

Fun Fact: This is a TRUE Prohibition-era Rye, crafted in an old-school bootlegger still from an authentic recipe handed down from a female distiller who made what was Al Capone’s favorite pour!

Finish: Mid-long finish, slightly drying, leather and black pepper round it out
Our Take: Warning, this Rye is actually a Time Machine. The story of Iowa Legendary is, well, legendary! This is a true Prohibition-era recipe, going back to a lady by the name of Lorine Sextro, a bread-baking German Catholic mother who used her skills to become a bootlegger (never caught, by the way!). This bottle literally takes you back in time to a pour that was Al Capone’s favorite (say what you will, he’s got good taste in spirits). Currently, Lorine’s grandson, Heath Schneider, is continuing her legacy, carrying the formal title of “Bootlegger’s Grandson”. Together with Whiskey Rich, a 5th generation bootlegger himself, they are dedicated to recreating this original Rye recipe without cutting any corners. They use bread-baker’s yeast, just like Mrs. Sextro did. They age their Rye in 15 gallon casks. Why? Because, in the true wisdom of Grandma Lorine, you can’t run from the law with a 40 gallon cask under your arm! Their recipe has remained unchanged, using only 4 ingredients: a 100% rye mashbill, cane sugar, bread baker’s yeast, and water. And rather than scaling up to use a larger and more efficient still, they choose to distill in 6 tiny 26-gallon stills to ensure consistency in their batches (think of it like baking a bunch of loaves of bread!). We fell in love with the Sextro story, as well as this delicious Rye. This is a treat for our subscribers, as this Gold Label isn’t even available to the public yet, and the Iowa Legendary label isn’t distributed outside of the state of Iowa! We hope you enjoy tasting this piece of history, taking a step back in time to experience a true Prohibition-era Rye!

On one of the founders’ trips to Alaska where the brand’s idea was formed, they were hanging out with the “Tiger King” of Alaska, who brought out a badger on a leash to hang out with them around the campfire. And thus the idea for the Spirit Animal hybrids on the labels was born!

Our Take: If you take darn good whiskey, and blend it with more darn good whiskey, and you have a great blender, something strange happens: you get a whiskey that is somehow BETTER than the sum of its parts! That’s what you have here with Mythology. Founder and blender Scott Yeates utilizes his exceptional palate to take the whiskey they source from Kentucky and Indiana (MGP) to craft a layered whiskey that tells a story. The brand was founded by a group of friends who bonded on their camping trips to Alaska around a bottle of whiskey and a campfire, always telling stories and spending time together. Whiskey is all about slowing down life and connecting with your community, and we think this Mythology Cask Strength Bourbon is pretty much the ideal pour for that. “Discover Your Spirit Animal” is the slogan for Mythology, and the classic bourbon notes from this Best Friend Bourbon (with a good boy on the label) are just as good as having man’s best friend alongside you for your adventure (or at least really close). Their ethos as a brand is personal connection, both forming those connections with their consumers and enabling their customers to form personal relationships in their own communities. Their style is perfectly suited to that, with their dunnage warehouse (located at 6,200 feet altitude!) set up with earthen floors and a single level of casks to give them consistently aged product that they put into their blends. There is actually even a natural spring located 3 feet under the warehouse, creating a uniquely humid climate for their cask maturation! Their passion for people and stories is infectious (seriously, check out the poem Scott wrote about Best Friend Bourbon below), and we are proud to bring you this superb cask strength whiskey. Distillery Story: Spending time with friends on the mountain has helped define who we are, and the idea for Mythology started while on a ski trip in Alaska’s backcountry. Sharing stories of skiing steep lines and drinking whiskey went hand-in-hand each night, and the duality of enjoying whiskey with friends while sharing experiences created the inspiration to start Mythology Distillery. Scott Yeates took the lead to start Mythology after returning from Alaska. His passion to bring friends together while sharing stories of adventure over a glass of whiskey led to the opening of Mythology in Denver’s Lower Highlands neighborhood in 2018. Mythology opened the new Steamboat Springs, CO campus in July 2023! This new campus allows Mythology to consolidate all production in a state-of-the-art Distillery and purpose-built Rackhouse while also creating an amazing customer experience. The campus includes The Confluence which includes a cocktail bar, restaurant and outdoor whiskey garden. The opening is a homecoming for the three friends who founded Mythology and live in Steamboat. Leveraging years of experience that our production team gained from other successful distilleries, our team developed a portfolio of Whiskey, Gin, Vodka and Specialty Spirits. Mythology is named Denver’s Top Distillery consecutively and our spirits have won over 60 national and international awards, many of which are Gold, Double Gold and Best in Class. Colorado has welcomed Mythology with open arms and the company expands nationally, expanding distribution into 10 states.
On Best Friend Bourbon: As The Sun Rests On The Horizon… …. a proud farmer gazes with admiration at a majestic oak standing tall among the surrounding stalks of corn. A sip of bourbon as his hand brushes over his best friend who lays beneath him. Not a word spoken until the sun rests for the night. His passion to bring friends together while sharing stories of adventure over a glass of whiskey led to the opening of Mythology in Denver’s Lower Highlands neighborhood in 2018. Mythology opened the new Steamboat Springs, CO campus in July 2023! This new campus allows Mythology to consolidate all production in a state-of-the-art Distillery and purpose-built Rackhouse while also creating an amazing customer experience. The campus includes The Confluence which includes a cocktail bar, restaurant and outdoor whiskey garden. The opening is a homecoming for the three friends who founded Mythology and live in Steamboat. Leveraging years of experience that our production team gained from other successful distilleries, our team developed a portfolio of Whiskey, Gin, Vodka and Specialty Spirits. Mythology is named Denver’s Top Distillery consecutively and our spirits have won over 60 national and international awards, many of which are Gold, Double Gold and Best in Class. Colorado has welcomed Mythology with open arms and the company expands nationally, expanding distribution into 10 states.
On Best Friend Bourbon: As The Sun Rests On The Horizon… …. a proud farmer gazes with admiration at a majestic oak standing tall among the surrounding stalks of corn. A sip of bourbon as his hand brushes over his best friend who lays beneath him. Not a word spoken until the sun rests for the night. Like generations before him – a man and his dog share company as he reflects on the beauty that surrounds him. His dog eagerly awakes each day to run the fields, rest at the tall oak and calmly await his best friend’s return at dusk. Inspired by the spirit of Man’s Best Friend, we crafted a Bourbon to enjoy with good company while reflecting on the day’s experiences.
