Distillery Story
The team over at Mammoth Distilling are our kind of people, a group of fun-loving whiskey geeks who are passionate about hospitality and finding innovative ways to create the best spirits possible (plus, they're Michiganders, like Seabass). As Phil Attee, their Blender and National Sales Manager, says, "We're actually just a bunch of nerds who have lucked out in this industry." Phil is a former analytical food chemist and has worked with Mammoth for over a decade, joining a team founded by Chad Munger that includes a microbiologist, an artist, and an agronomist! So you can rely on them to know their stuff, which is necessary when they do wild and extravagant things like resurrect an extinct variety of grain that needs to be grown on its own remote island (see Rosen Rye) and Jurassic Parking (is that a phrase?) another species of rye lost in a shipwreck on Lake Huron nearly 150 years ago (keep your eyes open for their Shipwreck Rye project). The world is their oyster, as Michigan's wealth of natural resources (it's the second-most agriculturally diverse state in the US after CA) allows them to grow and experiment with many different types of grain and wood. They have big goals that start with their name, as this is a "Mammoth-sized" endeavor to bring the abundance of the North to people through their many spirits (plus Chad and his wife Tracy have a woolly mammoth-esque Newfoundland dog they feature on their labels).
This Northern Bourbon is a perfect example of their success, the fruit of several projects to make whiskey that properly represents their region. As Phil says, "If you do whiskey right it has terroir." Local grains (Wapsie Valley Corn, Wheeler Rye, and Conlon Barley) in their Woolly Bourbon provide incredible richness and viscosity, and after a wide search to determine the sort of wood that would best complement their distillate, they settled on toasted cherry wood staves from right in their backyard (Michigan being the cherry capital of the world and all). There's this fruity and spicy component to the cherry wood that really amplifies what's already in the whiskey, and the aromatics from the wood make the flavors from the heirloom grain varietals really pop and adds some delightful perceived sweetness. Phil's description of it is music to our ears, as he says "Nobody is gonna taste this and say I've had whiskey that tasted like that before. It's recognizable that it's Bourbon, but it's not Bourbon like you've had before." This process is hard to make repeatable, so it's a testament to their craft that they're able to include this as a regular part of their lineup going forward, and this is the first time it is being released outside of their tasting room. But don't let that stop you from visiting one of their many tasting rooms across MI, trust us, they'll show you a good time!

Distillery Story
Casey Jones Distillery, named after Master Distiller Arlon "AJ" Casey Jones' grandfather, is both an homage to the past and a testament to the now. AJ and his wife Peg couldn't even spell "distillery" (or so they say) when someone shipped them an old still of Casey's that had been commissioned by the federal government for a National Forest visitor center. But, for an engineering genius like AJ, he was able to figure out how to make it work and carry on his grandfather's legacy! As for Peg, who basically runs the place as the resident "factotum" (she had to hop off our interview to go finish spreading some mulch), she says it's been "supercalifragilisticexpialidocious" to work on this project with her husband. According to her, Jones men have to be building something massive every 18-24 months, and we're sure glad that the distillery was one of those things 11 years ago! You'll want to visit for sure, not only because it's a beautiful facility, but also, as AJ says, "We try to treat people like they belong here."
And this Total Eclipse Bourbon truly belongs in your glass! One of the fun things about the Hopkinsville area is that they're in the cross-section of where the last two eclipses in 2017 and 2024 intersected. Thousands of day-visitors and campers flocked to the Casey Jones property to participate in "Lights Out and Bottoms Up" as AJ dubbed it. This "Out of this World" Four Grain Bourbon was released specially for the 2024 event, and later on got featured on the Forbes list of top 7 new whiskeys of the year! While their Mash Bill #1 was honoring the past, this is their Mash Bill #4, bringing Casey Jones into the 21st century with a blend that was made to appeal to all people and fit all taste profiles. And yet, there's clearly a consistent DNA across their different bottlings, with them being made with local corn and wheat, thus qualifying as "Kentucky Proud" products. Peg and AJ say they really saw all the goodness of humanity during the Eclipse events, so whenever you sip on this whiskey, cheers to the Casey Jones team (and maybe give them a ring, they actually like to talk on the phone)!

Distillery Story
For those of you who might be learning about them for the first time, Pete and Vienna Barger founded this incredible distillery in 2013 and have been producing whiskey all along the way! Their primary business is as a contract distiller for other brands, specializing in giving their clients a wide array of options to tweak their distillation process and create a product that is uniquely their own. Once they started releasing their own spirits under the Southern Star label, it was clear that this rockstar distillery wasn't just trying things out, but pulling from a wealth of experience, well-aged stocks, and expert craftmanship. Statesville, NC, used to be the liquor capital of the world prior to Prohibition (a combination of access to both distribution channels and great agriculture), and the Bargers knew it was the perfect place to bet on themselves the old-fashioned way, going all in by emptying their bank accounts and working multiple jobs to make it work. Pete's engineering background was pivotal, as they designed and built the facility (one of the most impressive we've ever seen) from the ground up.
This Southern Star American Single Malt is an incredible follow-up that we had to include in our lineup after it blew our tasting panel away with its unique flavors and amazing texture. It's pretty much the perfect example of how Southern Distilling goes about making their whiskeys, using traditional processes when helpful, but feeling free to innovate where they feel it's needed. This whiskey isn't just a copy-paste of how single malt is made in other countries, but takes advantage of American practices, being distilled on a column versus a pot still. And it fully embraces the options that come with the new American Single Malt standard of identity that was ratified in early 2025, crafting this release as a 50/50 blend of whiskey aged in both new charred oak and previously-used bourbon casks. With all these factors, Pete says, "It's not going to be foreign to someone who likes Scotch, but it's going to be different. It's not going to be foreign to someone who likes Bourbon or Rye, but it's going to be different." It's built to appeal to a new generation of whiskey lovers, and we know it's right up the alley for our community, who are always up to try new and exciting things that we've never before tasted in an American whiskey. Plus, it's the first cask-strength single malt we've ever included! Pete states, "We think this new category is the most exciting thing in the American whiskey space today", and we couldn't agree more. Cheers!

Distillery Story
Ohio might not be the first place you think of when you contemplate American whiskey, but the team at Middle West Spirits is doing their best to change that. Founded in 2008 as one of the earliest craft distillers in the country, CEO and Master Distiller Ryan Lang knew that he wanted to do things the right way, representing Ohio as much as he could, farm to bottle with local grains and even local oak for their casks! Ryan's family comes from a farming background in PA, just over the Ohio border, so he knew the land of plenty in the Midwest that their name represents. Their ethos is featuring the flavors of the region, being built on the three pillars of Authenticity, Heritage, and Innovation. From piloting the country's first dark pumpernickel rye whiskey, to collabing with local Columbus legend Jeni's Ice Cream on a flavor (Whiskey and Pecans, we gotta try it), to our current Sample D, they are as original as it gets in honoring their roots!
Which takes us to this sample, our clean-up hitter for Release XVI! This Cask Strength Wheat Whiskey absolutely blew our tasting panel away when we tried it blind initially, checking off pretty much every box you want in a whiskey. Rich sugars and candied nuts? Check. A variety of fruit notes? Mmhmm. Baked goods and fresh spices? You bet! We couldn't lock it in fast enough. It wasn't until we were packing up the kits to ship them out initially (December 2025) that we found out that it had just received the honor of being selected as the #14 ranked whiskey of the year for the 2025 Whisky Advocate Top 20, which might just be the most prestigious list out there! Once again, it's confirmation that these producers are making spirits that hold their own in any competition. Factor in price, crop-to-cask Ohio grain, and excellent availability, and this bottle has the potential to be a mainstay on our members' shelves for years to come. So crack it open and pour a dram for your friends, and know that this just might be the start of a new Golden Age for whiskey in America!
