Distillery: Drift Distillery in San Clemente, CA
Name: Single Barrel Wheat Whiskey
Proof: 90 Proof
Age Statement: A minimum of 2 years old
Mashbill: 100% Wheat
Color/Appearance: Light maple syrup
Aroma Notes: Caramel, a hint of oak, brown sugar, baking spices, licorice, cedar, and honey

Our Take: It doesn’t get that much more exclusive than this Single Barrel Wheat Whiskey offering from Drift Distillery! This is an excellent example of a pioneering product from a craft distillery not afraid to push the limits to find something exciting and exceptional. There aren’t many 100% wheat mashbills out there, but once people taste this we think more distilleries will try!
Distillery Story: Owners Ryan and Lesli Winter founded Drift Distillery to make quality small batch spirits that are all hand-made right in San Clemente. One of the most unique aspects of Drift is that this grain-to-glass operation is getting their wheat from their parents’ family farm outside the town of Bison, Kansas. They take a lot of pride in the fact that they’re able to make premium spirits that they love with the grain planted and harvested by their parents. Not many distilleries can say that. Even the tasting room is built out of a 100-year-old barn from the farm, definitely making it a one of a kind operation. This distillery is worth a visit if you're ever in San Clemente, as their briskets and sauces are second-to-none.

Age Statement: 4 years old
Mashbill: 70% Corn, 25% Rye, 5% Malted Barley
Color/Appearance: Dark amber, deep cider

Our Take: Corbin Cash perfectly epitomizes everything the Blind Barrels experience is all about! This is an under the radar distillery that is a throwback in terms of their method, putting the focus on making the best whiskey possible instead of trying to maximize profits. Their spirit enters the barrel at a low 110 proof, ensuring a fantastically complex and rich whiskey, and is made completely from grain grown in the San Joaquin Valley. This is a special bourbon that we are over the moon to have discovered and to be able to present to our Blind Barrels community.
Distillery Story: Corbin Cash is a true (and rare) farm-to-bottle distillery in that they proudly grow all the base produce and grain used in making their spirits. For nearly 100 years, the Souza family has been lucky to have farmland in California’s beautiful San Joaquin Valley, where rich soil and endless sunshine create the perfect conditions for raising the best sweet potatoes, which are used in some of their signature spirits. When David John Souza took the reins of the family business, he set out to discover new ways people could enjoy this delicious food. A love of good times, plus a dose of entrepreneurship, led him to create an ultra-premium spirits company called Corbin Cash, named after his son Corbin Cash Souza.
