WhistlePig took its 12-year rye and decided dessert was a perfectly reasonable place to take it. This limited single-barrel release starts with a 94% rye / 6% malted barley mashbill, then gets finished in proprietary Maple Crème Brûlée casks that previously held WhistlePig’s own Vermont maple syrup. It lands at an easy-drinking 86 proof, so the finish gets plenty of room to show off.

Expect maple syrup, caramelized sugar, vanilla custard and bananas Foster, with graham cracker, cinnamon and that spicy rye backbone keeping it from turning into liquid dessert. The finish hangs around with burnt maple, icing sugar and rye spice.

This is one of those bottles that sounds like it could be a gimmick, but the age and rye spice give all that maple sweetness something serious to push against.
